Ignite and Preheat: Connect the machine to an LPG gas cylinder and use the ignition system to light the burners. Adjust the flame using the control knobs to a medium-high setting and allow the thick iron or steel plate to heat up evenly for several minutes.
Grease the Surface: Once the plate is hot, use an onion half or a small, oil-soaked cloth to lightly grease the entire cooking surface. This ensures the dosa doesn't stick and develops a golden-brown color.
Pour and Spread: Pour a ladle of dosa batter onto the center of the hot plate. Use a flat-bottomed bowl or a professional dosa spreader to quickly and smoothly spread the batter in an outward, circular motion to achieve a thin, even layer.
Cook and Garnish: Let the dosa cook on one side. The gas flame provides consistent, uniform heat for a crispy texture. Add oil or ghee around the edges and on top as it cooks. You'll see the edges start to lift and turn a golden-brown color.
Fold and Serve: When the dosa is crispy and golden, use a flat spatula to loosen it from the plate. Fold it in half or roll it up and serve it hot, immediately. Clean the surface with a damp cloth before pouring the next one.
