Season the Tawa (First Use): Before the first use, you must "season" the tawa. This involves cleaning it, then applying a thin layer of cooking oil and heating it over a medium flame for a few minutes. This process creates a natural, non-stick surface.
Preheat the Tawa: Place the tawa on a stove over a medium flame and allow it to heat up completely. A good way to test if it's ready is to sprinkle a few drops of water; if they sizzle and evaporate quickly, the tawa is hot enough.
Oil and Temper: Lightly grease the surface with a few drops of oil using a cut onion or a paper towel. This step is important for preventing the dosa from sticking.
Pour and Spread the Batter: Pour a ladle of dosa batter onto the center of the tawa. Using a flat-bottomed ladle or a bowl, quickly and smoothly spread the batter in a circular motion to create a thin, even layer.
Cook and Serve: Let the dosa cook on one side until the edges turn golden brown and begin to lift. Add a few drops of oil or ghee around the edges and in the center. Once it's crispy, fold or roll it and serve. Wipe the tawa with a damp cloth before making the next dosa.
