Heat the tawa: Place the cast iron tawa on a stove and preheat it thoroughly on a medium-high flame until it's very hot.
Grease the surface: Lightly oil the hot tawa with a paper towel or an onion half to prevent sticking.
Pour and spread: Pour a ladle of dosa batter onto the center and quickly spread it in a thin, circular motion.
Cook and fold: Let the dosa cook on one side until it becomes golden and crispy, then fold it using a spatula.
Serve and repeat: Use the double handles to easily lift and serve the dosa. Wipe the tawa with a damp cloth before cooking the next one.
