Usage
:Ignite and Preheat: Connect the bhatti to a gas supply and turn on the burners. Use the control knobs to set a medium-high flame and allow the large, thick tawa to heat up evenly for at least 10-15 minutes to reach the ideal cooking temperature.
Season the Tawa: Lightly grease the entire surface of the hot tawa with oil and a cloth or an onion half. This is a crucial step to prevent the dosas from sticking and to ensure a perfect crispy texture.
Pour and Spread: Pour a ladle of dosa batter onto the heated tawa. Use a flat-bottomed bowl or a specialized dosa spreader to quickly spread the batter in a wide, circular motion, creating a thin and even dosa.
Cook and Garnish: Let the dosa cook on one side. The large surface area allows you to cook multiple dosas simultaneously. As it cooks, you can add oil or ghee and any fillings.
Remove and Clean: When the dosa is golden brown and crispy, use a long, flat spatula to gently loosen it from the surface, fold, and serve immediately. Wipe the tawa with a damp cloth to clean off any residue before making the next batch.
