It is used for preparing large quantities of idlis, khaman, dhokla, and other steamed food items quickly to meet high demand.


Usage

 :
  • Water and Heat: Fill the base of the steamer with water (below the lowest idly plate). Place it on the gas stove and turn on the flame to bring the water to a rapid boil and generate sufficient steam.

  • Grease and Fill Plates: Lightly grease the 82 idly molds across the 4 large plates. Pour the prepared idly batter into the molds, filling them about three-quarters full.

  • Load: Stack the filled idly plates onto the central stand (if applicable) and carefully lower the entire assembly into the steaming chamber.

  • Steam: Securely close the big-size lid to trap the steam. Cook on a consistent high flame for the required steaming time (typically 10-15 minutes, depending on the machine's efficiency and batter consistency).

  • Check and Serve: Turn off the gas, carefully open the lid (away from your face), and check if the idlis are done (a toothpick inserted should come out clean). Allow to cool slightly, then carefully remove the plates and scoop out the idlis.
